BLENDER EGG MUFFINS
This is such an EASY way to keep breakfast SIMPLE.
1 carton of egg whites
6 eggs
Any vegetable(s) you like!
Throw the ingredients in the blender, then ladel them into greased muffin tins.
Bake at 350 for 15-18 mins. Should make about 12 muffins.

TRADITIONAL HUMMOS
Recipe:
1 can of garbanzo beans, rinsed and drained
1-2 cloves of garlic
3 T. tahini
½ t. Salt
¼ c. lemon juice
Splash of water for desired thickness

EAT THE RAINBOW
When planning your week, consider what vegetables are in season and which are not. For example, in the warmer months I stick to Greek/ Syrian Salads (which can be easy to assemble, with a little prep).
In the colder months, I enjoy roasting zucchini, broccoli, sweet potatoes and squash varieties.
